CAOL ILA 2012 The Disappearance Chess Investigation Series

The Disappearance is the third bottling in the Chess Investigation series, an inquiry centred on the famous Islay distillery, Caol Ila. With impressive versatility, this single malt seems able to adapt to any type of cask while constantly asserting its character. This release, distilled in 2012, finished its maturation in a first-fill sherry cask for 14 months. The dark colour foreshadows the influence of the Jerez wine, which is confirmed on the palate, to the delight of fans of the style. An explosive sherry-peat pairing that works wonderfully, bottled reduced to 46% to let the smoke, spices and dark fruits express themselves. Traditionally used in the maturation of Scotch whiskies, sherry casks gave way to bourbon casks over the second half of the 20th century. They are now back in the spotlight, alongside innovative and decidedly experimental maturations and finishes: wine, Champagne, beer, rum, Cognac, Calvados and Chouchen casks... plenty to feed the diversity of malt spirits!
