This version was matured in a cask previously used for a Maury red wine and is dominated by a peat with particularly pronounced animal tones.
The palette of flavours and aromas also reveals fruity sequences in which the Roussillon wine’s influence is particularly noticeable. The perfect example comes in a finish that brings together both exotic fruits and dried fruits.
Tasting notes
Nose : Rich, heady. On the first nose, aromas of peat and Emery cloth are coated in absolutely delicious fragrances of fortified wine. Allowed to breathe, notes of spice bread, candied apricot and date create a pyramid of aromas sprinkled with animal (leather, bacon) and ashy scents.
Appearance : Cuivre orangé.
Palate : Full-bodied and creamy. The chocolatey and caramelized attack also becomes empyreumatic (tarmac, zan liquorice sweets). The spicy mid-palate (ginger, cinnamon) returns in force to the animal notes of the nose (red meat, bresaola). Gradually, peat and Corinthian raisin flavours appear together in harmony.
Overall : Long, silky. Closely linked to the palate, the start of the finish takes on what had until then been only underlying exotic tones (mango, persimmon). The crisp after-taste is delicately tertiary (fig, dried leaf, mushroom) and roasted (coffee, mocha coffee). Peat then acts as a subtle backdrop.
