Nose : fresh, fine. At first nose, notes of green almond and chlorophyll mix with aniseed and saline scents. With airing, it becomes even more herbaceous (watercress, lamb's lettuce) while green melons accentuate the fruity character of the aromatic palette. Then, a note of rice puts its signature at the bottom of the first stage of the tasting
Appearance : or vert
Palate : both airy and unctuous. Very fresh, the attack in mouth evokes a rice field. Aquatic flavors of water lily and rush permeate the taste buds with great delicacy and restraint. Rich, the mid-palate reveals notes of candied ginger, cinnamon and lotus flower. The aftertaste is exotic (lychee) and tertiary (chestnut)
Overall : long, balanced. At the beginning of the finish, notes of vine leaves, raw fish and rice of great refinement make the taste palette evolve towards a more and more greedy register. Then, a thin layer of licorice and flavors of green tomato and zucchini fritter provide plenty of breed on the aftertaste. The empty glass is slightly camphorated, roasted (coffee, black tea) while revealing a very pleasant salinity that takes us back to the very beginning of the tasting.
