Tasting
Nose : fresh, fine. On the first nose, notes of green almond and chlorophyll appear alongside aniseed and salty fragrances. Allowed to breathe, it becomes even more herbaceous (watercress, lamb’s lettuce) as green melon accentuates the aroma palette’s fruity character. A note of rice then adds it signature to the end of the nose.
Appearance : greenish gold.
Palate : ethereal yet creamy. The very fresh attack is like a rice field. With lots of delicacy and reserve, aquatic flavours of water lily and bulrush flood the taste buds. The rich mid-palate reveals notes of candied ginger, cinnamon and lotus flower. The end of the palate is exotic (lychee) and tertiary (chestnut).
Overall : long, well-balanced. At the start of the finish, notes of vine flower, raw fish and very refined rice bring the flavour palette to an increasingly rich register. Next, a fine layer of liquorice and flavours of green tomato and courgette tempura bring the retro-nasal olfaction lots of distinction. The empty glass is slightly camphoric and roasted (coffee, black tea), while revealing a very pleasant salinity that takes us back to the start of the tasting.
