With great delicacy, this version evolves according to the admirably chiselled peat which acts in depth on its aromatic and gustatory palette, without at any moment weighing down the subject.
Very evocative and full of naturalness, it recreates the atmosphere of a malting area or the new make scents of a distillation room.
Tasting notes
Nose : Fine, unctuous. <br>Revealing a particularly chiseled peat, the first nose is also lemony, fruity (pear, apple), vanilla and herbaceous (green barley). On aeration, fine ashy particles rain down on the aromatic palette. As it goes on, it becomes more and more animal (bacon) and empyreumatic (pellets). The olfactory ensemble shows a great homogeneity.
Appearance : Or vif
Palate : Clear, lively. <br>At the beginning of the mouth, flavors of new make delicately peaty impregnate the palate. Peat and smoke come next. Spicy (Cayenne, Espelette), the mid-palate ventures into vanilla and fruity lands (white peach, William pear). Animal (Bündnerfleisch, smoked bacon), the end of the mouth gives back notes of herbaceous Havana in combustion.
Overall : Long, creamy. <br>Unctuously vanilla (flan), the beginning of the finish is at the same time liquorice, herbaceous (lychee, seaweed) and lemon. Of course, the peat and the smoke occupy the first ranks without weighing on the gustatory palette. Oscillating between notes of almond, cashew nut and candied ginger, the aftertaste evokes with acuity a malting area. Taking up the vanilla, smoky, herbaceous and lemony accents of the first nose, the retro olfaction is remarkable for its vegetal freshness. From the empty glass escape aromas of barley mush and orgeat syrup.
