Mezcal

Mezcal is a Mexican spirit drink made from the fermented and distilled juice of the agave fruit, grown in one of the seven legally authorized states. Originally, all spirits produced from agave juice were called mezcal. It was only in the 19th century that a distinction was made between Mezcal and Tequila, when, with the industrial revolution, it became possible to cook the agave hearts (piñas) in steam ovens. There are several varieties of mezcal: espadin, tobalà, tobaziche, cenizo and papalometl. 100% agave mezcals are distinguished from ‘mixtos’ that are made from at least 80% agave juice. Both categories must be bottled in Mexico in order to qualify as mezcal.
