Double distillation
Espadín is the agave variety most commonly used to make mezcal. Its sword-shaped leaves, which rise towards the sky, protect the piña. As a general rule, it takes 5 to 8 years for an Espadín agave to reach maturity, but we prefer to leave ours alone for 8 years. The extra time is well worth it.
