A sweet, herbaceous expression, well-balanced with notes of red apple, ripe fruit and a light smoky finish.
Origin: San Pablo Huixtepec, Oaxaca
Double distillation
Espadín is the agave variety most commonly used to make mezcal. Its sword-shaped leaves, which rise towards the sky, protect the piña. As a general rule, it takes 5 to 8 years for an Espadín agave to reach maturity, but we prefer to leave ours alone for 8 years. The extra time is well worth it.

Nose : fresh herbs with hints of wood from the fireplace
Palate : chopped agave, mesquite, sweet red apple and ripe fruit
Overall : sweet and fruity, with a hint of smoked wood on the palate.
