In the spring of 1936, Thompson Willett began construction of the Willett Distillery. The first barrel was put into aging on March 17, 1937, St. Patrick's Day. Dormant since 1980, then purchased in 1984 by Martha Willett, the founder's granddaughter, and her husband, Even Kulsveen, the distillery resumed production on January 21, 2012, under its original name, after extensive renovations. Made from a mash bill composed of 72% corn, 13% rye, and 15% barley, this version is an authentic ode to the glory of corn. Long afterward, the aromas emanating from the dry extracts in the empty glass are a vibrant testament to this.

Nose : Fine, deep. Deliciously apricot and peppery, the aromatic palette is also marked by remarkably pure corn notes. Upon aeration, aromas of citrus (orange, mandarin), wax, salted butter caramel, cucumber, and ginger add even more complexity.

Appearance : vieil or à reflets cuivrés.

Palate : Both lively and subtle. Closely linked to the nose, the taste palette is initially marked by intense flavors of orange, caramel, and corn. It continues with particularly heady notes of oak stave, praline, and dried fruits (date, walnut).

Overall : Rich, silky. Powdery (cocoa, ginger) and vanilla, the finish then displays more oriental nuances (curry, saffron, orange blossom). Remarkably fresh, the retro-olfaction invites us to savor a delicious cardamom tea.
