With the limited edition Pitch, Holyrood Distillery explores new aromatic expressions by combining Pot Still Malt Scotch with Brown Malt—more commonly used in dark porter beers—and two yeast strains from red wine fermentation: Pepe Nero and Toro Nero. This unique blend highlights the impact of malt and yeast in shaping aromas, far beyond cask aging. Matured in oloroso casks, Pitch delivers a rich and indulgent profile: cocoa, blackcurrant, and honey on the opening, followed by stewed red fruits and a spicy green pepper. The finish extends the experience with notes of coffee, raisins, and woody spices.
