Nose : Ester mysteries. Orchard nose with complex notes of pear, fresh green apple and passion fruit. At first sight, the forbidden fruit is a cereal. After a few moments, we wonder if we're not dealing with a slightly azimuth brandy, as a hint of juniper berry gently creeps in.

Palate : Softly. Not the slightest aggressiveness on the palate. The balance is there, between a measured fatness and an absolutely velvety texture. The spelt drop oscillates between tenderness and fluidity. No heaviness, mineral purity, the sensation of freshness is gradually conveyed by the quiet acidity of exotic fruit.

Overall : A lightly toasted brioche highlights the cereal and melted butter. Sweetness and discreet bitterness round off the tasting of this exceptional “blanche”.
