Located in Chermignac, in the heart of Saintonge, Domaine des Forges has belonged to the Vallein Tercinier family since its founding in 1791. Today, Catherine and Louis Tercinier, representing the sixth generation at the helm of the house, distill the wines from their vineyards situated in the Bons Bois and Fins Bois appellation areas, alongside their independent bottling activity for other Cognac crus. Complex and vibrant, this expression from the Through the Grapevine range explores fruity, floral, chocolaty, spicy, medicinal, and empyreumatic notes. The autumnal richness of its aromatic and gustatory profile highlights the Fins Bois terroir, composed of clay, limestone, and some sand.

Nose : rich, concentrated. Floral (iris, hyacinth), fruity (apricot, mango), and powdery (cocoa, ginger), the aromatic profile is elegant and complex. Upon aeration, new fruits emerge (banana, blackberry, raisin) before empyreumatic scents (incense, apricot kernel) envelop the olfactory space.

Appearance : cuivre orangé.

Palate : clean, lively. In line with the nose, the tasting profile is marked by flavors of beeswax, marmalade, grated ginger, and cinnamon. Then medicinal (balm) and citrusy, it unfolds into notes of salted butter caramel, walnut, and gentian root, radiant with maturity.

Overall : long, balanced. Oxidative, rancio (cherry brandy, prune) yet simultaneously smooth (quince jelly) and chocolaty, it is adorned with licorice and roasted coffee nuances. Honeyed (lavender), the retro-olfaction takes on oriental tones (Turkish delight, rose petal). Full-bodied, the empty glass reveals floral (violet), mineral (chalk), and herbal (tobacco) notes.
