Our parcel rum comes from the northern part of the Poisson Estate, protected by the topography which benefits from good sunshine and ventilation. The mauve cane from this plot is cut by hand. We use the best yeast to obtain a long fermentation of 80 hours. After distillation in our creole copper columns, we obtain a 70.7% vol. rum with preserved aromas.
