Indomitas is a single blended rum resulting from the blend of two rums distilled in 2010, one in a pot still and the other in a Coffey column, blended together.
The first rum undergoes a single maturation of 15 years in ex-Bourbon casks. The second follows a double maturation process, with 6 years in ex-Bourbon casks, followed by 9 years in ex-Cognac casks.
Fully tropically aged, these two rums are then blended to create a cuvée with a structured and expressive profile.
Nose : Dried fruits and nuts, citrus zest, toasted notes and refined oak, complemented by hints of caramel and ripe stone fruit.
Appearance : vieil or soutenu.
Palate : Vanilla and coconut from the ex-Bourbon casks blend seamlessly with rounder notes of candied fruit, spiced caramel and fine oak derived from the ex-Cognac maturation.
Overall : Dry spices, pepper, cocoa, precious woods and subtle roasted notes, leading to an elegant and precise persistence.
