With Jim Swan as their mentor, the Yorkshire distillery works with a field to bottle approach, meaning that they grow their own barley on their farm in Hunmanby and use local spring water. This means they can control the entire whisky production process, right through to bottling on site. Very few distilleries can boast such meticulous attention to detail!
