Tasting notes
Nose : full-bodied, subtle. The ethereal first nose wavers between notes of William’s pear, watercress, green walnut, vanilla and cut hay. Allowed to breathe, fragrances of orange blossom and hyacinth highlight the aroma palette’s heady nature. Becoming increasingly medicinal (ointment, mustard poultice) and at the same time malty, it continually grows in depth and fullness.
Palate : lively, concentrated. The particularly spicy attack (star anise, nutmeg, clove) gives its own, more intense take on the medicinal notes from the nose. The herbaceous (green barley) and fruity (pear, apple) mid-palate gradually allows the expression of citrus fruits (lemon, grapefruit) and verbena. The serene end of the palate is pleasantly vanilla and mentholated.
Overall : long, silky. Closely linked to the end of the palate, the start of the finish releases deeply refreshing flavours of coriander, dill and parsley. With a pleasant honeyed softness, the end of the finish pours grains of barley across the palate. A perfect summary of the nose and palate, the retro-nasal olfaction is very generous. As well as being intensely malty, the empty glass is also medicinal, camphoric and peppery.
