Pedro Ximenez and Palomino are the two key grape varieties that make up Jerez and Montilla-Moriles wines. Whilst those produced from Palomino for the manzanillas are generally dry, almost marine, those produced from Pedro Ximenez are far creamier, sometimes even syrupy. This Bota no.56, which has been caskaged over a very long time, has maintained remarkable freshness and smoothness.

Nose : rich, opulent. The initial nose is marked by dried fruit (fig, date, walnut) and very fresh notes of balsamic vinegar. Develops into black fruits (blackberry, blueberry) and sweet spices (cinnamon, ginger). Once aerated, its autumnal character (dead leaves, wilted roses) adds a poetic dimension.

Palate : warm, heady. The attack on the palate has a very fine grain to it. With candied notes of exotic fruits (mango, persimmon) and fine spicy (cardamom, cumin) notes of heady florals (lily, iris), the mid-palate becomes increasingly concentrated. Flavours of gingerbread and toasted walnuts feed an indulgent end of the palate.

Overall : long, silky. Endowed with a chocolatey bitterness and underpinned by an invigorating acidity. A few grains of salt gradually cover currants, greengage plums and candied citrus fruit (orange). Lingers with roasted notes (coffee, tobacco). The retro-nasal olfaction highlights the quality of its wood and the freshness of the aromatic and gustatory palette. The empty glass allows dried fruit (fig, cashew nut) and spices (star anise, cinnamon) to take the upper hand.
