Tasting note

  • Appearance : vieil or.
  • Nose : ample, parfumé. Les fruits exotiques (ananas), le melon et les fruits secs (noix, châtaigne) le disputent à la fleur de vigne et aux raisins mûrs. Elle rappelle l’époque des vendanges. L’arrière-plan est recouvert de foin et de notes finement boisées (chêne).
  • Palate : ronde, mature. Les compotes, les miels et les tartes aux fruits les plus variées témoignent de son extrême gourmandise. En milieu de bouche, s’il fallait choisir un fruit, ce serait indiscutablement la poire. Sa peau est fine, sa chair onctueuse et son jus sucré. Quelques fleurs (rose, pivoine, violette) embaument l’atmosphère d’une fin d’après-midi radieuse.
  • Overall : douce, équilibrée. Elle nous ramène dans la vigne. Un vent marin est venu déposer du sel sur les raisins mûrs et sucrés. De cet équilibre s’échappent quelques notes de levures et de fleurs capiteuses. Le verre vide évoque un cognac au meilleur de sa maturation.

In 1850 Georges Vallein began selling his cognacs in bottles. Since then, five generations of distillers have followed in his footsteps, continuing the work of their ancestors and creating remarkable blends. Today the Vallein-Tercinier family offers versions of the main crus from the cognac appellation as well as unique and rare bottlings from its own collection. The blending process, which is the fruit of long experience, enables complete control over of the quality of the finished product. By blending aged eaux de vie and a variety of different crus, the Maïtre de Chai is able to create perfect harmony.
