Valdespino’s take on one of the rarest styles in sherry production. The base is made from palomino grapes from Macharnudo Alto’s vineyard in the Grand Cru area of Jerez. It begins life heading towards the more common fino and amontillado styles but due to its failure to create the special layer of yeast (or ‘veil of flor’), which occurs naturally and without intervention, it is further fortied to 20% and eventually turns into the rare Palo Cortado style.
- The brand
Valdespino is one of the oldest bodegas in Jerez, dating back to 1264. It owns Clos de Macharnudo, the finest terroir in the appellation. From the poor, chalky soil, known as alabriza, it produces its Fino, Inocente, and its best Amontillados. These wines are made with no concessions to modern methods; they are matured in barrels under a protective film of yeast (flor), which gives them the flavour of walnuts and almonds that is characteristic of fine sherries.
