Tasting note

  • Appearance : Incolore.
  • Nose : Il jette un voile de levures qui évoque un vin du Jura issu du cépage Savagnin. Joliment végétal (fougère, sauge), les féculents sont en toile de fond. Le fruit (pomelo, melon) finit par dominer tandis que le miel d’acacia apporte de l’onctuosité.
  • Palate : Vive, nerveuse. Une pointe de fumée accompagne de la menthe poivrée. Le pain grillé et les amandes se dirigent en direction de la pomme de terre. Les fruits mûrs (prune, pêche), la noix de cajou, la figue et les épices (poivre, gingembre) nuancent le propos.
  • Overall : Longue, ferme. Elle s’avère pimentée et toujours aussi mentholée. Le cèdre et le pin ajoutent une note empyreumatique. Les fruits renaissent de leurs cendres (ce n’est pas qu’une image), on les croque à pleine dents.

The brand

The shochu produced by Kuroki Honten is made from an organic cereal base in the prefecture of Miyazaki on the island of Kyushi in southern Japan. This is the ‘honkaku’ or ‘authentic’ type of shochu. Distilled once in pot stills, they have much in common with single malt whisky. Hyakunen no Kodaku is even aged five years in sherry casks, like many Speyside malts! Very fashionable in Japan, shochu has undergone a real revival, and Kuroki Honten is one of the most respected producers: its products can be found in all of the country’s best ‘Izakaya’.
