A nose brimming with ocean spray that inevitably recalls the seaside, a palate that slowly glides into smoky tones, and a finish that evokes with rare intensity a hearthstone chimney - this is just one of the paths we are invited to take to better understand this bottling. Yet, we could have taken a more creamy and fruity path, or even one that was more mineral, floral and spicy. But, whichever path is taken, we are always taken to a single destination: Port Askaig. Colour: pale gold. Nose: refined, frank. Maritime and salty (shellfish, salt), the initial nose is also marked by notes of citrus fruit (lemon, grapefruit). Mineral (chalk, slate), it then develops into sweeter notes (custard tart). Next, fine notes of ash and iris accompany a very subtle floral register (lily of the valley, tuberose). Precious wood and noble spices (cinnamon, nutmeg, pink peppercorn) arrive in a climax. Palate: lively, sharp. Clove sets a lively tempo on the attack. It sketches the contours of an elegant, ethereal gustatory palette constantly refreshed by a cool, salty breeze. The seaside is near. The mid-palate becomes creamier (vanilla, candied fruit). Then, with a very fine smoky and balsamic (Cypress, pine) bitterness, the end of the palate also becomes honeyed (acacia), spicy (ginger) and ashy. Finish: delicate, distinguished. The smoke continues to gain ground on the peat. You might even hear the crackling of a glowing fire under the chimney. Finally, notes of vetiver arrive with candied citrus fruit (lemon, yellow grapefruit) and white flowers (lilac, lily). The retro-nasal olfaction mirrors the medicinal character of the nose. Black pepper also appears. The empty glass is fruity (pear, apple), musky, vanilla, with delicate notes of peat and roots (ginger).
