Tasting notes
Nose : creamy and heady. On the first nose, a hint of varnish appears alongside raisin, iodine tincture and candied orange. Allowed to breathe, the nose becomes increasingly fruity (white peach, marmalade), oily (peanut), roasted (grilled coffee), spicy (cinnamon) and herbaceous (gentian). The aroma palette has become more concentrated while retaining lots of freshness.
Appearance : topaz.
Palate : both lively and smooth. Though full of lemony vivacity, the attack is also vanilla and creamy (chestnut, yoghurt). On the mid-palate, cane sugar spreads around the sides of the palate, with sugar cane in the centre. At the end of the palate, a fine apricoty and caramelized liqueur coexists harmoniously with exotic fruits (mango, guava, persimmon).
Overall : long, silky. The start of the finish is like biting into liquorice stick. Later, bitter oranges release their tangy juices. At the end of the finish, pipe tobacco, apricot stone and crème brûlée fill the air. The retro-nasal olfaction places sugar cane at the heart of the tasting and the empty glass is honeyed (acacia), fruity (William’s pear) and spicy (ginger).
