Description
With an ester content of 200-300 grams per hectolitre of pure alcohol, this venerable version selected by Alexandre Gabriel for La Maison du Whisky is part of the MMW, Monymusk Wedderburn, category of rums created by the Clarendon distillery. Having spent more than 30 years in the cask, it has carefully maintained all the exuberance of its youthful years in the heart of its palette of flavours and aromas. With sumptuous maturity, it has also perfectly assimilated the influence of an incredibly delicately textured wood. These two closely linked aspects of its personality are brought together to create a now legendary rum.
Tasting notes
Nose : rich, unctuous. Characterized by notes of very ripe banana, mustard seed, ginger and cinnamon, the first nose is also medicinal (camphor, iodine tincture). Allowed to breathe, aromas of dark chocolate, candied orange and roasted pineapple fill the air. Roasted (coffee, black tea, tobacco), it also becomes increasingly empyreumatic (cedar, burnt wood, tobacco). A few particles of dust hang above the aromatic palette.
Appearance : mahogany with glints of green.
Palate : powerful, slender. The tannic (cocoa, orange zest, ripe banana peel) attack is ethereal, with impressive breadth. Dark chocolate, liquorice and curry then contract the taste buds a little more. On the mid-palate, burnt sugar cane spreads across the palate. At this point, the flavour palette evokes a 1950s sherry cask single malt from the warehouses of the Scottish independent bottler Gordon & MacPhail. Spectacular!
Overall : long, mature. From fresh fig to blood orange, and walnut husk to preciously woody notes (rosewood), with a very pleasant salinity, the finish reveals with time a huge variety of fruits (rhubarb, quince, plum, Corinthian raisin). Next, a compendium of noble spices (star anise, cumin, turmeric, clove, grated ginger) brings lots of energy to the majestic end of the palate. Working in harmony, the retro-nasal olfaction and empty glass punctuate the tasting with notes of tobacco, dark chocolate, ylang ylang, pine resin and tar.
