Peat Stop is an Imperial Oatmeal Stout aged in ex-whisky casks from the Kilchoman distillery. This thick, dark beer reveals sweet (caramel) and grilled (coffee) aromas imparted by the roasted malts, combined with Islay’s notes of sea spray and peaty power. - Appearance : Black garnet.
- Nose : Rich, original. We begin on a beach in Machir Bay where the smoke from a fire made with driftwood dominates the first nose. Allowed to breathe, scents from French maltings appear (coffee, roasted cocoa), followed by fragrances from Italian bars (tiramisu, cappuccino) that melt into a bouquet of sweet (chocolate, caramel), rooty (ivy) and smoky aromas. A hint of soy sauce completes the world tour begun by this incredibly complex nose.
- Palate : Intense, structured. Initially peaty (earth, smoke), under the cask’s influence the attack reveals a succession of wild fruits (red berries), candied fruits (dates, figs) and nuts (pecan, peanut) that bring additional complexity to the roasted and rich (chocolate, coffee) mid-palate typical for this stout. At the end of the palate, the peat’s well-integrated peat adds structure and lightness to the beer and softens its strong alcohol.
- Overall : Long, complex. The start of the finish reveals incredibly sophisticated smoky notes as well as a hint of prune that gives way to an unctuous (peanut butter) and iodine after-taste. On the retro-nasal olfaction, the peat remains present until the end of the tasting... and even long after. Like a holiday album, the empty glass is at once roasted, sweet, smoky and salty, recalling the adventures experienced and inviting them to be relived.
