Quand on voit (ou goûte) la qualité des whiskies produits par Penderyn, on se demande pourquoi il aura fallu attendre 2004 pour voir renaître le whisky gallois. D’ailleurs elle reste à ce jour la seule distillerie locale. Entre Penderyn et le porto, c’est une belle histoire d’amour, tant les fûts de vins lusitaniens habillent si élégamment le malt gallois : il a su garder sa fraîcheur sans se laisser dominer par les notes capiteuses que peut donner son vieillissement, en prenant juste ses belles notes de fruits rouges avec ses accents de vinaigre de framboise ainsi que son côté floral.

Aged between January 2012 and June 2015 in a bourbon cask from the Buffalo Trace distillery, this bottling was then finished until July 2017 in a cask that had previously been used for port wines for 80 years. The last port was 20 years old and the winner of numerous medals at international competitions. Though this Penderyn has soaked up every drop of the port, it has to be said that it also brilliantly expresses the firm, uncompromising style that is so characteristic of this unique Single Malt. This paradox is quite simply an endless source of olfactory and gustatory joy.

Profile: the fine, complex nose wavers between salted butter caramel, black grape, rose petals and plum liqueur jam. The fruity (redcurrant, raspberry), delicately tannic palate develops with tobacco and heady florals. The expressive finish beautifully returns to black grape whilst becoming chocolatey. Tasting note

  • Appearance : orangey copper with glints of mahogany.
  • Nose : rich, complex. With salted butter caramel, incredibly crunchy black grapes and rose petals, the initial nose is quite simply spellbinding. Allowed to breathe a little, it becomes jammy (plum liqueur, gooseberry). Then, everything is gradually covered in a thin layer of bloom, as though we have bitten into the skin of a ripe grape. Palate:
  • Palate : taut, lively. Though gooseberry is just as present on the attack, lots of red fruit (redcurrant, raspberry, strawberry) is also found, highlighting the port’s delightful influence. With time, a gently tannic sensation gradually dresses the taste buds, refreshing them as it does so. Next, fine notes of blond tobacco and heady florals (iris, lily) gradually intensify the end of the palate.
  • Overall : long, very sappy. Equally as expressive, the finish takes us first to the heart of a vineyard to breathe in herbaceous and floral aromas. Whole bunches of black grapes beg to be picked and trampled under foot in traditional lagares. Aromas and flavours of black fruits (cherry, blackcurrant) perfume the end of the palate. The retro-nasal olfaction even brings blueberries and blackberries. The empty glass is liquorice and chocolatey.

Produced using a single copper pot still with a special column above the still that removes any undesirable elements, the Penderyn distillate is collected at 92%, a purity that plays an important role during maturation. The result is a whisky with a subtle mix of tradition and modernity. Penderyn’s single malts are predominately matured in casks that have previously contained Evan Williams bourbon, a nod to the ancient family of Welsh distillers that founded one of the first American distilleries. Penderyn is also lucky enough to benefit from the services of Jim Swan, an extremely famous distiller and a genuine expert in the art of maturation.

The distillery

Penderyn est un mélange subtil de tradition et de modernité, il se chuchote qu’il serait même le « uisgy » le plus doux au monde. En distillant pour la première fois en 2000, cette distillerie construite à proximité du Parc National de Brecon Beacons, renouait avec l’ancienne tradition du whisky gallois. Fait unique dans l’industrie du whisky : la distillerie possède une paire d’alambics Faraday, du nom de leur créateur. Cet alambic en cuivre à repasse est surmonté d’une colonne de distillation lui permettant de récolter un distillat des plus purs, à 92%. Distillerie innovante, Penderyn est également reconnue pour le vieillissement exceptionnel de ses malts, au sein d’anciens fûts de vin de madère. Une distillerie qui place la qualité des produits au centre de ses préoccupations en s’offrant depuis son ouverture les services du célèbre master distiller Jim Swan.
