In June 2014, the Penderyn distillery, which had previously sourced its mash from the Brian brewery in Cardiff, was equipped with a mill, mash tun and six washbacks so that it could produce its own mash for distillation. Aged in a second fill cask previously containing a famous Islay single malt, this version stages smoke and peat that reach their peak on the finish and in the dried extracts found in the empty glass. This gradual evolution sketches the contours of a palette of flavours and aromas that wonderfully reproduces the fruity and mineral style of this unique and uncompromising single malt.

the well-balanced first nose is fruity (apple), exotic (banana) and vanilla. Allowed to breathe, a veil of smoke covers the aromatic palette. Gradually it becomes vinous, earthy and roasted. The lively and delicate attack is delicately tannic, chocolatey and spicy (cinnamon). The finish sees the peat become more powerful. It is accompanied by candied citrus fruit, cut hay and white florals (lily).

Tasting note

  • Appearance : pale gold.
  • Nose : refined, balanced. First of all, a fruity (apple), exotic (pineapple, banana) and vanilla sequence takes centre stage. Then a veil of smoke gradually places a gentle bitterness (ash) over these very sweet notes. Once allowed to breathe, the aromatic palette is increasingly vinous (white Grenache, Marsanne), releasing the fragrances of a Havana cigar, slightly damp soil and roasted notes (roasted coffee).
  • Palate : at once lively and delicate. On the attack, stunning tannins coat the taste buds, creating a chocolatey, spicy (cinnamon, star anise) and unctuous film. On the mid-palate, smoke rings float through a green landscape bathed in sunlight. Freshly picked fruits (Louise Bonne pear, white peach) are placed delicately on freshly cut grass. At the end of the palate, dark chocolate and an evanescent peat appear alongside one another in perfect harmony.
  • Overall : long, generous. At the start of the finish, the same refined bitterness found in the palette of aromas returns. Like Ariane’s thread, it is a highlight of the tasting, now that the peat has become the most present. On the retro-nasal olfaction, candied lemon, cut hay and white florals (lily, iris) bring stunning iridescent nuances to the chromatic palette. Adding its signature to the tasting, a rich, oily peat literally surges from the empty glass.

Produced using a single copper pot still with a special column above the still that removes any undesirable elements, the Penderyn distillate is collected at 92%, a purity that plays an important role during maturation. The result is a whisky with a subtle mix of tradition and modernity. Penderyn’s single malts are predominately matured in casks that have previously contained Evan Williams bourbon, a nod to the ancient family of Welsh distillers that founded one of the first American distilleries. Penderyn is also lucky enough to benefit from the services of Jim Swan, an extremely famous distiller and a genuine expert in the art of maturation.

Penderyn est un mélange subtil de tradition et de modernité, il se chuchote qu’il serait même le « uisgy » le plus doux au monde. En distillant pour la première fois en 2000, cette distillerie construite à proximité du Parc National de Brecon Beacons, renouait avec l’ancienne tradition du whisky gallois. Fait unique dans l’industrie du whisky : la distillerie possède une paire d’alambics Faraday, du nom de leur créateur. Cet alambic en cuivre à repasse est surmonté d’une colonne de distillation lui permettant de récolter un distillat des plus purs, à 92%. Distillerie innovante, Penderyn est également reconnue pour le vieillissement exceptionnel de ses malts, au sein d’anciens fûts de vin de madère. Une distillerie qui place la qualité des produits au centre de ses préoccupations en s’offrant depuis son ouverture les services du célèbre master distiller Jim Swan.
