Aged in port casks, this version was distilled in 2004, the year the distillery opened, and is sure to remind fans of the impressive Penderyn Madeira, bottled at cask strength a few years ago. First there is the very dark colour, and its extremely complex fruitiness; but then there are also velvety tannins with the softness of taffeta and, most of all, a delicate set of balances that manages to place the tremendously smooth character of the Lusitanian wine on the same pedestal as the mineral firmness that so often characterises this unique Welsh single malt.

Profile: deep, with notes of jam, dried fruit, incense and red fruit, all rivalling in olfactory intensity. Rich and voluptuous, the palate reveals a distillate that is incredibly pure in its expression. Vinous (black grapes), and chocolatey, with notes of vanilla and apricots. A passionate love affair between port wine and malted barley.

Tasting note

  • Appearance : mahogany with glints of green.
  • Nose : deep, unctuous. Notes of fig jam and rancio (cherries in brandy) compete in intensity in the initial nose, which also reveals notes of almond and apricot, incense, salted butter caramel and red fruit (wild strawberry). On aeration, the malted barley finds a way through to take centre stage. This particularly ample aromatic palette is underscored by a superbly refined woodiness. Magnificent.
  • Palate : mellow, generous. Velvety tannins coat the palate. They are accompanied by a particularly long and elegant attack. Superimposed on an extremely pure distillate, the flavour palette presents vinous notes (black grapes), as well as apricot, vanilla and chocolate. The mid-palate develops notes of leather, varnish and beeswax. The end-palate becomes even richer, with notes of spices (ginger, star anise).
  • Overall : balanced, oily. With splendid maturity and fullness, the finish is delightfully voluptuous (mocha, black forest). There is a perfect marriage between the port and the malted barley: neither one dominates the other. This almost perfect osmosis precedes a retro-nasal olfaction with notes of liquorice and spices (cinnamon, ginger). The empty glass is chocolatey, vinous and slightly camphorated.

Produced using a single copper pot still with a special column above the still that removes any undesirable elements, the Penderyn distillate is collected at 92%, a purity that plays an important role during maturation. The result is a whisky with a subtle mix of tradition and modernity. Penderyn’s single malts are predominately matured in casks that have previously contained Evan Williams bourbon, a nod to the ancient family of Welsh distillers that founded one of the first American distilleries. Penderyn is also lucky enough to benefit from the services of Jim Swan, an extremely famous distiller and a genuine expert in the art of maturation.

The distillery

Penderyn est un mélange subtil de tradition et de modernité, il se chuchote qu’il serait même le « uisgy » le plus doux au monde. En distillant pour la première fois en 2000, cette distillerie construite à proximité du Parc National de Brecon Beacons, renouait avec l’ancienne tradition du whisky gallois. Fait unique dans l’industrie du whisky : la distillerie possède une paire d’alambics Faraday, du nom de leur créateur. Cet alambic en cuivre à repasse est surmonté d’une colonne de distillation lui permettant de récolter un distillat des plus purs, à 92%. Distillerie innovante, Penderyn est également reconnue pour le vieillissement exceptionnel de ses malts, au sein d’anciens fûts de vin de madère. Une distillerie qui place la qualité des produits au centre de ses préoccupations en s’offrant depuis son ouverture les services du célèbre master distiller Jim Swan.
