Pablo Horeda produces manzanilla sherries in the purest tradition of Sanlucar de Barrameda. Saline, almost iodised, they are also particularly fruity, voluptuous and mineral (chalk). With great maturity and great freshness, after numbers 4, 8, 16, 22, 32 and 42, this Bota no. 55 is the seventh to be released from this bodega.

Profile: saline fruitiness, almost iodised. Becomes vivacious with citrus fruit and dried fruit (date, fig).

Tasting note

  • Appearance : burnished gold with glints of topaz.
  • Nose : chalky, saline. Beginning with delicious candied citrus fruit (lemon, orange, grapefruit), the initial nose then develops into notes of fresh walnut and fresh tobacco. Spices (turmeric, cinnamon) and dried apricots give huge definition. Once aerated, a veil of yeast gently covers the aromatic palette. It grows increasingly floral (peony, hyacinth).
  • Palate : deep, unctuous. The milky character of the attack is supremely elegant. It moves in the opposite direction of the nose, developing into a lively character provided by the citrus fruit. New dried fruits (date, fig) then flood the palate in a saline atmosphere. The end of the palate wavers between notes of marmalade and wilted rose.
  • Overall : long, delicate. Very sweet honeys mix with exotic fruits (mango, guava). Next, the superb fragrance of lime blossom perfumes the very end of the palate. The retro-nasal olfaction is refreshed by an iodised, marine kiss, whilst grated ginger slowly spreads across the gustatory palette. The empty glass is at once fruity, floral and spicy

Three men, Jesus Barquin, Edouardo Ojeda and Alvaro Giron, united in their passion for Andalucia’s wines, are instigated the La Bota project. The project began in December 2005, when, while visiting a very old bodega, they discovered several dozen ‘butts’ of Amontillado sherry that had been undisturbed for more than 20 years. They selected a small quantity and bottled it under the name La Bota de Amontillado Navazos. Initially they only offered it to friends and a small group of sherry enthusiasts. Such was their success that they formed the ‘Equipo Navazos’, and have since released thirty small bottlings. Every one is a masterpiece.
