NINKASI Ex-Rasteau Single Cask Conquête

Nose : full-bodied, lively. On the first nose, aromas of black grape, rancio (cherries in brandy, raspberry liqueur) and toast reflect the originality of the aroma palette. Allowed to breathe, a handful of exotic fruits (passion fruit, persimmon), fresh walnut and curry open up new paths and olfactory horizons. The entire nose is covered in a fine layer of green liquorice and walnut husk.

Appearance : topaze.

Palate : rich, full-bodied. The beautifully oxidative attack (lime blossom honey, ripe peach, cocoa powder) continues the educational mission undertaken by the nose. Monotony is exiled and the unexpected prevails. On the mid-palate, malty, biscuity, milky (porridge) and rich (vanilla flan) flavours as well as red and black fruits (blueberry, blackcurrant, cherry, strawberry, raspberry) coexist in complete harmony.

Overall : long, silky. The very tactile start of the finish brings the bloom found on perfectly ripe fruit skin, such as black grapes ready for harvest. The empyreumatic end of the finish (eucalyptus, oak stave) is refreshed with the flavours of a cardamom tea. On the retro-nasal olfaction, cane sugar envelops the taste buds in a continuous wave of floral (carnation) and fruity (apricot, melon, fig) notes. The empty glass is mentholated, vanilla and spicy (cinnamon, saffron).
