Founded in 1823, Mortlach was one of the few distilleries permitted to produce spirits during World War II. Using partial triple distillation, it is equipped with traditional condensers called “worm tubes”. A subtle blend of finesse and power, this bottling shows wonderful maturity despite its young age. A real gem, it overflows with all the ingredients that make this single malt considered one of the best in Speyside.

Profile: powerful, spicy, exotic and vanilla-scented, the nose is also honeyed and herbaceous. A hint of oily peat makes an appearance. Reminiscent of a white Burgundy. Brimming with life and energy, the palate is hot and spicy. Juicy fruit and hay pave the way for a subtly peaty finish.

Tasting note

  • Nose : refined, complex. The initial nose is particularly elegant and marked by notes of juicy pear, coriander, baked apples, vanilla, heady florals and heather honey. Allowed to breathe, it develops in complexity, becoming exotic (mango, passion fruit) and delicately woody and malty. Gradually the aromas open up even further, with notes of Havana cigars and lime blossom making an appearance.
  • Palate : lively, dynamic. The attack is very spicy (white pepper, clove), as well as being floral (lily of the valley, lilac) and creamy (vanilla, almond milk). Next, aromatic plants (vervain, camomile, oregano) take over the mid-palate, revealing lots of minerality. The barley now guides the rest of the flavours, as a fine dusting of earth gradually covers the taste buds.
  • Overall : long, enveloping. The finish is increasingly rich, with notes of fig and strawberry jam, prune cakes and various gingerbreads. With time, vanilla and dark chocolate develop in stunning harmony. The retro-nasal olfaction reveals saffron, malt and roasted notes (coffee). The empty glass is green and marked by notes of chlorophyll and infused plants.

Founded in 1823, Mortlach is allegedly built on the site of a former illicit distillery. It was one of the rare distilleries allowed to produce alcohol during the second world war, right up until 1944. Using partial triple distillation and a traditional “worm tube” condensation system – also used by Talisker and Edradour – Mortlach produces a very delicate distillate. As is the case with many of the distilleries owned by the Diageo group, very few official bottlings of the malt exist outside of the Flora & Fauna and Rare Malts ranges released in the 1990s.



Although the independent bottler Signatory Vintage cannot claim to be one of the oldest in Scotland, it has managed to build up an extremely solid reputation amongst the great malt connoisseurs. The creator of the famous range The Prestonfield and many other well-known ranges, it is best known for its un-chillfiltered and cask strength bottlings that offer amateurs the chance to enjoy their whisky in its most natural form. It was also one of the first independent bottlers to acquire a distillery and now offers a growing number of expressions of one of the most artisan single malts available.

The Cask Strength Collection of single malt and single grain whiskies is without doubt one of the most appreciated ranges. Each release is bottled undiluted, unchillfiltered and usually consists of a single cask. To help the consumer appreciate their whisky at more than a purely aromatic and gustatory level, Signatory Vintage takes care to display on each label, with great precision, the region of production, the date of distillation and bottling, the type of cask used, its number and the number of bottles of the same nectar that were produced. This range thus offers some fascinating facts, in addition to exceptional quality!
