In Gaelic, Dair Ghaelach (pronounced ‘dar gayloch’) means Irish oak. This version has been aged in American oak barrels from 15 to 22 years, before being finished in new Irish oak barrels for ten months in Kilkenny Country. According to Kevin O’Gorman, the master of maturation at the Midleton distillery, this finishing produces a smoother whisky, with pronounced notes of vanilla, caramel and toffee. It should also be noted that the fruity character of this remarkable single pot still whisky has also gained in intensity.

Tasting note

  • Appearance : burnished gold with copper tinges.
  • Nose : Both heady and silky. The initial nose has plenty of character and drifts from exotic fruit (mango and pineapple) to more classical fruity notes (melon and apricot), together with beeswax and vanilla undertones. The fruity dimension gradually takes on redder tones of redcurrants and raspberries. Then noble spices (cardamom), more tertiary (lichen) and roasted (tea) notes waft in to enhance this olfactory masterpiece.
  • Palate : lively, clean. Cuts right through the nose, wiping out all the elements of the aromatic palette. Herein begins a completely new tasting. Peeled fruits such as guava and nectarines flood the palate with their sweet juices. The red fruits have acquired a jammy flavour and blackcurrant jelly hits in at the last minute.
  • Overall : balanced, precise. Ample, it opens with notes of distant horizons and gives us an intense moment of pleasure while contemplating its bucolic landscape. Its sublimely fresh scent has intense notes of lime blossom. The retronasal olfaction is delicately woody, spicy (black pepper) and chocolatey. The empty glass reflects the firmness and minerality of the initial nose.

The single pot still range was created by Irish Distillers to highlight a style of whiskey that is characteristic of Ireland. The pure pot still recalls the ancestral traditions that are the foundation of Irish whiskey’s reputation: it is made from malted and non-malted barley and is always distilled three times. Since Irish Distillers’ pot still whiskies – Redbreast, Green Spot, Yellow Spot and some releases of Midleton and Powers – are all produced in the same distillery, they could be called ‘single malts’ like the whiskies that come from a single distillery in Scotland.
