Tasting note

  • Appearance : ambre cuivré à reflets dorés.
  • Nose : fin, précis. La pâte à bois, le vernis, la résine de pin, le brou de noix, tout cela rappelle l’atmosphère d’une menuiserie. Il évolue sur les épices (cardamome), la noix de coco, le miel de bruyère et les fruits mûrs (abricot, pêche). Il s’agit en réalité de variations sur un même thème.
  • Palate : puissante, franche. Les fruits se sont déshydratés (raisins, datte, figue). Le chêne s’exprime avec noblesse tout comme ses notes de caramel au beurre salé. Tertiaire, elle se prolonge sur la truffe blanche et le cèdre. A quoi il faut ajouter une petite touche de bacon !
  • Overall : d’une grande longueur, elle fait preuve de beaucoup d’énergie. Musculeuse, c’est en force qu’elle révèle la noblesse de son boisé (chêne, cèdre). Elle se prolonge sur les épices orientales (curcuma, coriandre, cardamome) et sur le parfum d’ylang-ylang. La terre de bruyère et le miel de sapin émanent du verre vide.

Bill Lark created his distillery 153 years after the town of Hobart in Tasmania closed the doors on the last of its distilleries. From its peat bogs to its extremely pure water – perfect conditions on all fronts to produce a superb whisky. The idea for the distillery first came to Bill Lark at the end of a particularly successful trout fishing trip. His daughter Kristy has now taken over from him at the head of the distillery and a 1,800 litre capacity wash still and a 500 litre spirit still have been installed. One of its single casks (LD39) has just been chosen as the best Australian whisky.
