The first distillery to open in Chicago since the mid-19th century, Koval has been making whiskey from organic Nepalese millet since 2008. Millet is a gluten-free grain from the Poaceae family. Aged in new Minnesotan oak casks, this version is extremely complex, mature, silky and remarkably balanced. From the very beginning, it stands out at the top of the overly-crowded American whiskey ranking table.
