Although the sherry just about gains the upper hand over the peat and smoke in the finish, it is only with a view to prolonging the intense pleasure experienced in tasting this Kilchoman aged in sherry casks. Whether in the nose or on the palate, the notes inherent to sherry and those accumulated through smoked mal - ted barley are so deeply embedded here it is impossible to tell them apart. This beautiful weaving of scents and tastes creates a complex, deep, sparkling and remarkably well-balanced single malt.

Tasting note

  • Appearance : topaz
  • Nose : nuanced, balanced. The sherry and peat join forces to create notes of hay, soil, walnuts and curry. What ensues is the perfect embodiment of a peated single malt. It then becomes iodised, medicinal, salty, rubbery, ashy, smoky and spiced (mustard seed).
  • Palate : concentrated, rich. The opening is entirely given over to showcasing the main subject of interest here: peat. This does not, however, exclude the presence of ripe (Mirabelle plum, quince) and exotic (pineapple, kiwi) fruit. Both saturated by smoke and incredibly airy, the mid-palate continuously strives to move forward. A handful of spices and a healthy dose of heady flowers line the paths that it follows. A wonderful feeling of fullness emanates from the overall effect.
  • Overall : voluptuous, silky. Like a phoenix, it is reborn from the ashes and feeds off ripe fruits (Mirabelle plum, watermelon) so as to replenish its youth. The addition of sherry here plays a key role in this metamorphosis. The retro-nasal olfaction shifts between candied fruits, oily, liquorice-infused peat and Havana cigar smoke. The empty glass presents a remarkable freshness (menthol, cypress).

The first distillery built on the Isle of Islay for over a century, Kilchoman celebrated its third birthday in September 2009, with its new spirit finally reaching the age required for it to be legally called a single malt. Built using the model of a “farmhouse-distillery”, Kilchoman makes a point of distilling its new spirit from barley grown on its own land. Some 100 tonnes are harvested and malted at the distillery, providing 30% of their needs. The rest comes from the maltings at Port Ellen. Its first barrel of new make spirit was filled in 2005.
