Tasting note

  • Appearance : vibrant gold
  • Nose : both refined and heady. The nose opens with peat and smoke coated in lemony, liquorice-infused and mentholated scents. Peppercorns, cloves and nutmeg then emerge on the scene, adding extra length. It gradually becomes increasingly medicinal (balm) and rustic (straw, stables).
  • Palate : determined, assertive. The acridity of the peat jostles with icing sugar and squeezed lemons for attention. Yellow reaches a dazzling peak, with daffodils and broom blossoming on the mid-palate. It becomes increasingly voluptuous (rice pudding, tangerine jam). At the very end of the palate, the smoke transforms into oily peat.
  • Overall : long, fleshy. While the peat and smoke continue to play the starring roles, fresh fruit (Mirabelle plum), vanilla, juicy, tangy oranges and meadow flowers (dandelion, daisy) form a sparkling, vivacious backdrop. The retro-nasal olfaction is liquorice- and vanilla-scented, while the empty glass is floral (iris, lily).

The first distillery built on the Isle of Islay for over a century, Kilchoman celebrated its third birthday in September 2009, with its new spirit finally reaching the age required for it to be legally called a single malt. Built using the model of a “farmhouse-distillery”, Kilchoman makes a point of distilling its new spirit from barley grown on its own land. Some 100 tonnes are harvested and malted at the distillery, providing 30% of their needs. The rest comes from the maltings at Port Ellen. Its first barrel of new make spirit was filled in 2005.
