KILCHOMAN 14 ans 2006 Sherry Hogshead Single Cask Conquête

Nose : rich, generous. On the first nose, behind apricot and cereal (barley) aromas, we glimpse smoke, soot, notes of smoked meat and an oily peat. Allowed to breathe, fragrances of toast and lavender honey intertwine with exotic fruits (mango, guava). Becoming increasingly complex, the palette of aromas then develops notes of verbena, iodine and heady florals (carnation).

Appearance : brown burnished gold

Palate : dense, stately. The very invigorating attack wavers between dark chocolate, nutmeg, salted butter caramel, toasted walnut and tobacco. Although of course present, the peat has only a subtle and gentle influence on the palette of flavours. The very end of the palate is unmistakably medicinal (camphoric), salty and herbaceous (gentian), bringing chimney smoke to mind.

Overall : long, ethereal. With remarkable purity, the start of the finish is soaked in a peaty yet very fruity (strawberry, raspberry) spirit. Remaining deeply expressive, it lingers on notes of grilled salmon. Becoming increasingly heady (rose petal, bramble bush, vetiver), the finish is also roasted (coffee) and nobly spicy (cardamom). On the retro-nasal olfaction, iodine tincture and toffee flavours create an especially harmonious duo. The empty glass is marked by notes of oak, praline and smoke.
