When it comes to aromas, this version flirts with the world of American whiskey and, more specifically, bourbon. This shows just how well the Kavalan distillate has perfectly integrated and digested its maturation in a new oak cask. Unless it's the other way round! In any case, the result lives up to expectations. Blinding luminosity, increasingly warm tones, numerous heady fragrances that perfume the air, delicious honeys that envelope the taste buds and a hint of exoticism all bring energy to a wonderfully noble wood.
Profile: the rich initial nose is vanilla, fruity (apricot) and empyreumatic (beeswax). Allowed to breathe, it becomes floral (iris). The sharp attack is silky (peach skin). - Appearance : coppery orange.
- Nose : rich yet delicate. Deliciously apricot (stone) and vanilla, the initial nose also reveals notes of polish (beeswax) and very noble precious wood. With lots of decorum, it develops an increasingly spicy (ginger, clove, cinnamon, nutmeg) and floral (iris, lily) register. Exuding warmth, it lingers with tobacco and leather.
- Palate : clean, sharp. The attack immediately evokes the skin of a wonderfully juicy nectarine. On the mid-palate, a variety of honeys (heather, acacia) spread across the palate. The end of the palate transports us to a radiant autumn. Fresh walnut, quince, chestnut and botrytized grapes create a feeling of fullness.
- Overall : long, rich. At one with the palate, the finish shows us this Kavalan in an exotic light (mango, coconut, guava). It maintains the balsamic freshness and tone of the initial nose. Embellished with the delicious aromas of new oak, heady florals (reseda, lime blossom) and noble spices (cardamom, cinnamon), the empty glass pays testament, if ever it was necessary, to the incredible balance of this bottling.
- The brand
The Kavalan distillery is named after an ancient tribe that used to the live in the region, in the north-west part of the island of Taiwan. Founded by the King Car Group, Kavalan did not hesitate to call on the services of the best experts in the industry, declaring their intention from the outset to make a whisky of exceptional quality. It was thus with the help of Jim Swann that the distillery produced the first drops of its new-make on 11 March 2006 and brought its first whisky to the market in December 2008. By selecting the best barrels, Kavalan managed to produce a range of single casks (sherry, bourbon and port) in 2009, only three years after it began production, and has already won numerous medals at a variety of international competitions.
