All about making whisky
A must have LMDW“ A 6 Year Old single malt with the maturity of a 40 Year Old or older Speyside - that’s how good this Taiwanese single malt is. Aged in a sub-tropical climate that accelerates the ageing process, the Kavalan sherry cask version is darker than the oldest of the sherry cask single malts we’ve tasted from Scotland. With the sole exception perhaps of the legendary Black Bowmore 1964/1994 with which it shares a slight rancidity and fruitiness bordering on the exotic. This Asian nectar is exclusively distributed on the French market and in most European countries by La Maison du Whisky.
Made from water sourced from the Hsuehshan (“Snowy Mountains”) mountains, Kavalan Sherry is a single malt from the Solist range, a collection of the distillery’s very best cask strength bottlings. Aged in oloroso sherry barrels, hand-bottled, undiluted, caramel-free and non-chill filtered, this is a rich, exotic and complex whisky that has already been voted the Best Rest of the World Single Malt at the World Whisky Awards 2011.
Sourcing actor, importer and exclusive distributor of a portfolio of international brands, La Maison du Whisky is, since 60 years a reference for whisky and spirit lovers. The Kavalan distillery is named after an ancient tribe that used to the live in the region, in the north-west part of the island of Taiwan. Founded by the King Car Group, Kavalan did not hesitate to call on the services of the best experts in the industry, declaring their intention from the outset to make a whisky of exceptional quality. It was thus with the help of Jim Swann that the distillery produced the first drops of its new-make on 11 March 2006 and brought its first whisky to the market in December 2008. By selecting the best barrels, Kavalan managed to produce a range of single casks (sherry, bourbon and port) in 2009, only three years after it began production, and has already won numerous medals at a variety of international competitions.
The Solist range brings together the most exclusive bottlings of Kavalan Taiwanese whisky. Bottled from a single cask, with no dilution, these single malt whiskies are always aged in one type of cask, stored in the cellars of the distillery of the same name in a tropical climate. Kavalan juggles with four kinds of cask to age its whiskies (bourbon, fino sherry, oloroso sherry and vinho barrique), but they are all identified by a series of figures that give more information about the ageing process. For example, for Kavalan Sherry Soloist 57.8%, the cask number S060821045 tells us the following: S = sherry, 060821 = date of distillation (21 August 2006), 045 = cask number. The bottling date is shown on the back of the bottle.
