Cask #16-2894.To celebrate La Maison du Whisky turning 60, the master blender at the Jack Daniels distillery selected ten casks with a view to bottling each separately. This fascinating olfactory and gustatory voyage through the warehouses of America’s most famous distillery resulted in not one but ten entirely different expressions of this Tennessee Whiskey filtered through maple charcoal and revered around the world.
Profile: powerful, the nose sways between ripe fruit, spices and precious wood. It becomes increasingly gourmand, reminiscent of an apricot tart. The palate is very well-balanced, exotic and balsamic. Red and black fruit also arrive on the scene. The finish is peppery and toasted.

- Appearance : orangey copper with glints of mahogany.
- Nose : rich, powerful. Stewed fruits (peach, apricot, Mirabelle plum) mingle silkily with intense spices (clove, nutmeg), notes of ash and charred wood. It develops into gourmand notes of apricot tart and vanilla custard. The woody aspect becomes increasingly refined with airing, with a note of polish (beeswax).
- Palate : dense, concentrated. With great balance, it wavers between dried fruit (date, fig) and exotic fruit (banana). The mid-palate is balsamic (menthol, pine resin). Gradually, notes of vanilla and tobacco take hold of the end of the palate. A handful of red and black fruit (strawberry, blackcurrant) coated in a sheen of caramel embellishes the gustatory palette.
- Overall : long, dynamic. Noticeably peppery, its tertiary register gradually settles into place. Notes of pipe tobacco and toasted oak arrive hand-in- hand with cocoa beans. The back of the palate is roasted (coffee, mocha). Ever so slightly saline, the retro-nasal olfaction is elegantly spicy (ginger, cardamom). The empty glass is an endless musing on notes of ash, ripe fruit and spices.

With 74 warehouses holding 1.6 million casks, Jack Daniel’s is one of the largest distilleries in the world. But this is certainly not what gives this whiskey – commonly referred to as “Jack” – its unique character and distinctive flavours. Unlike its bourbon-producing cousins in Kentucky, Jack Daniel’s follows the Lincoln County Process, a unique procedure that involves filtering the distillate through a layer of maple charcoal before being put into barrels.
