Located in Kirkwall, the capital of the Orkney islands, the Highland Park distillery uses its own peat from the neighbouring hills of Hobbister Moor to dry the barley which is still malted on-site. Distilled on 21 May 1991, this sherry cask bottling shows us this legendary single malt in a particularly peaty light. In turn rooty, salty, earthy, medicinal and animal, the aromatic palette is a vibrant illustration of this. Just as memorable, the sherry cask's influence is not to be outdone. Eloquently, it evokes a high-calibre sherry such as palo cortado.

Profile: the heady initial nose sees a rooty, salty peat dominate. It then becomes more earthy and medicinal (camphor. Allowed to breathe, heady florals fill the air. The clear attack reveals notes of incredibly juicy melon, fig and strawberry. Increasingly floral, the end of the palate precedes a finish that sees peat just gain the upper hand with a note of camphor. The retronasal olfaction rules in the sherry's favour. Tasting note

  • Appearance : mahogany with glints of old gold.
  • Nose : deep, heady. On the initial nose, a rooty, salty peat appears on the surface of the aromatic palette. This becomes increasingly earthy, medicinal (camphor), spicy (saffron, cardamom) and animal (leather, bacon). Allowed to breathe, heady florals (hyacinth, peony, lavender) fill the air with remarkable power. Blood orange, dried apricot, nutmeg, cocoa and Mirabelle plum then appear on each side of this intensely peaty backbone.
  • Palate : clear, full of energy. On the attack, the peat has deliberately become less intense, allowing the sherry's influence to be further highlighted. Emery cloth, juicy melon, wild peach, fig, date, mango and strawberry take turns on centre stage. All of these notes bring lots of sensitivity to the mid-palate which lingers with a more heady register (iris, lily, violet).
  • Overall : long, rich. Closely interwoven, the peat and sherry show equal presence. Increasingly liquorice and chocolatey, the peat nonetheless gains a slight upper hand with time. Camphor and root ginger confirm this earthy and mineral (manganese) evolution. In contrast, with its flavours of apricot, almond and verbena, the retronasal olfaction highlights the quality of the sherry cask ageing. The empty glass restores the peaty, medicinal and heady (iris) character of the aromatic palette.

Highland Park owes its special character to two elements that are essential to the production of whisky: people and peat. The latter, used for the barley it malts on site, comes directly from its own peat bogs, which are composed almost exclusively of Calluna heather and its roots. When it comes to people, Highland Park is so proud of its roots that it was the last distillery, a century ago, to still use endemic Scottish barley for the production of its whisky. It even experimented with maturation in Scottish oak casks. Luckily that experiment was abandoned when they proved to be too resinous. Find out more



Although the independent bottler Signatory Vintage cannot claim to be one of the oldest in Scotland, it has managed to build up an extremely solid reputation amongst the great malt connoisseurs. The creator of the famous range The Prestonfield and many other well-known ranges, it is best known for its un-chillfiltered and cask strength bottlings that offer amateurs the chance to enjoy their whisky in its most natural form. It was also one of the first independent bottlers to acquire a distillery and now offers a growing number of expressions of one of the most artisan single malts available.
