HAMPDEN Panettone

The Panettone, Hampden version is making a comeback for the holiday season. A few years ago, panettone was still a relatively undiscovered delicacy, but now it has taken pride of place among our favourite pastry chefs, grocers and bakers. Everyone is eager to prepare this brioche cake with raisins and candied fruit, a true emblem of Christmas in Italy. To pay tribute to this dessert, the Jamaican distillery Hampden Estate and Chef Giovanni Ricciardella of the family-run Cascina Vittoria restaurant in Lombardy in northern Italy have come up with a unique Jamaican rum brioche. Made with the DOK mark, which has a remarkable concentration of esters, the rum has incredible complexity and aromatic intensity, which the panettone sublimates.
