EVAN WILLIAMS 2007 Single Barrel - 60th Anniversary LMDW 60%
Bourbon, United States / Kentucky, 70cl, Ref: 51698A
Fully appreciating all the fragrances and flavours, that this demanding Evan Williams contains, requires a little patience. It is only after the initial encounter that the full richness and complexity of its aromatic and gustatory palette emerge to reveal their full force. Deeply intertwined while remaining clearly defined, the three stages of the tasting process all share a similar vibrancy, intensity and firmness.
Profile: powerful, the nose is characterised by dried fruit and lime blossom honey. Evokes crème brûlée. Allowed to breathe, it reveals notes of corn and exotic fruit (pineapple). The palate is roasted, spicy and vanilla-flavoured. The finish has a bright floral, fruity character.

- Appearance : burnished gold with copper tinges.
- Nose : simultaneously powerful and ethereal. The initial nose is characterised by notes of dried fruit (apricot, dates), lime blossom honey, crème brûlée and green liquorice. It moves on to freely express its creamy graininess, with maize taking centre stage. It lingers on notes of exotic fruits (roasted pineapple, flambéed banana) and fresh oak.
- Palate : energetic and formidable. The same apricot-inspired, roasted register found in the nose immediately takes over the taste-buds. Cocoa beans and candied ginger appear along the way, lending the mid-palate a powdery, fibrous dimension that is full of elegance. Streamlined, it gradually becomes spicy (cinnamon), liquoricey and vanilla-scented.
- Overall : long, firm. The perfect finishing touch continuing on from the end of the palate, the finish is evocative of a storehouse drenched in vanilla, woody, spicy and resinous aromas. Flowers (broom, iris) enhance its heady, sunny character. The retro-nasal olfaction wavers between citrus fruit zest (lemon, orange), ripe fruits (plum, peach), herbs (thyme, oregano) and dried fruit (dates). The empty glass is a pure ode to maize.
- The brand
Like Elijah Craig and Henry Mckenna, Evan Williams Kentucky Straight Bourbon is part of the range of products created by the Heaven Hill distillery to commemorate the historic pioneers of American whiskey. It has three main versions: the first, aged between five and seven years, with a black label bearing the same name as the brand; the second, a rarer version, Evan Williams 1783; and lastly its vintage bottlings, the Evan Williams Single Barrels, a series of whiskeys bottled from one single cask. For some time the brand has also included other liqueurs: Evan Williams whiskey blended with cinnamon, honey and cherries.
The distilleryAmerica's largest family-owned and operated distilled spirits producer and marketer, Heaven Hill Brands has grown beyond its traditional roots as a Bourbon distiller to become the country's seventh largest overall distilled spirits producer and marketer with a portfolio of well-known, innovative and relevant products. Heaven Hill remains the world's second largest holder of Bourbon Whiskey and produces some of the most successful distilled spirits brands in the U.S.
