The result of blending two single malts, one aged in sherry casks and the other heavily peated, this blended malt has the distinctive feature of having been produced at a single distillery. An outstanding balance, both the nose and the palate open with peaty and smokey notes that dominate the discussions until fruity and spicy notes highlight the influence of sherry on the aromatic palette. In contrast, the two adversaries finish by rivalling in intensity to offer us a spirited finish that is all at once peaty, earthy, salty, chocolatey, generous and foral. Superb.

Profile: Fleshy, powerful, the nose oscillates between peat, smoke, dark chocolate and heady flowers. It becomes ash, minty and spicy (saffron). The peat and smoke form a duo in perfect harmony in the palate whereas fruits and notes of praline highlight the influence of sherry. The palate witnesses the blossoming of a duo full of harmony, peat and smoke before fruity and praline flavours.

Tasting note

  • Appearance : deep, golden yellow.
  • Nose : both powerful and fleshy. The smoke and peat initially meet notes of damp earth, dark chocolate, heady flowers (peony, broom) and grey tobacco. Notes of ashes and vanilla come together harmoniously on aeration. In time, increasingly powdery (rice), minty and spicy (saffron, badian).
  • Palate : dense, rich. Forming a very compelling duo, the smoke and peat initially cover the range of tastes as well as the palate until tangy fruits fill the mid palate. Green walnuts, mint, citrus fruits ( orange, mandarin) and dark chocolate provide freshness and silkiness in the late palate.
  • Overall : long, gourmand. The sherry and peat rivalise in intensity and presence. The sherry shines with its chocolate, praline and tannic notes, the peat by its earthy nature salty and slightly stringent notes. Retro-olfaction is generous and floral (hyacinth, carnation). The empty glass as creamy, peaty and blossomy (cigar).

The distillery

Since 2005, with the opening of the Kilchoman micro-distillery on the isle of Islay, Edradour is probably no longer the smallest distillery in Scotland. Tucked away on the edge of a small valley, among the hills over the town of Pitlochry, this distillery resembles a charming little village with its red shutters, landscaped garden and gently splashing stream. Purchased in 2002 by Andrew Symington, the founder of Signatory Vintage, Edradour has become more than just a tourist attraction. This distillery-farm concentrates all the operations involved in the production of whisky in a single room, from the mill to the still, which is the smallest size authorized by the British Customs and Excise department. Very traditional, Eradour receives 100,000 visitors a year, who are literally transported to the 19th century in this remarkable time capsule.
