There are times when words simply aren’t enough to describe a whisky. Bright, solar, silky, noble, stately, exuberant, generous or even impulsive. These are just some of the adjectives that come to mind when describing the emotions felt when tasting this single barrel for the first time. Challenging all stereotypes and misconceptions along the way, it ceaselessly turns its back on bourbon stars that suffer from the same universality.
Profile: with incredibly delicate wood, the nose is fruity, nobly spicy and characterized by its grain. Allowed to breathe, it develops floral, citrus fruit and dried fruit notes. The attack bursts with black and red fruits. Luxurious, it gradually becomes more exotic and balsamic. The very balanced finish is notably vanilla, roasted and camphoric.

- Appearance : old gold with glints of coppery orange.
- Nose : rich, heady. The truly magnificent initial nose offers an incredibly delicate wood, stewed fruits (Mirabelle plum, quince), noble spices (cardamom) and captivating notes of maize and crème brûlée. It develops with empyreumatic notes (cedar, zan liquorice sweets), heady florals (iris, geranium), toffee, dried fruit (walnut, almond) and citrus fruit (mandarine, orange).
- Palate : deep, dense. Following on from the nose, the attack adds very ripe black (blueberry, bramble) and red (redcurrant, raspberry) fruit. The spirited mid-palate is enriched with utterly superb notes of varnish and condiments (cucumber, pickle). Luxurious, it becomes increasingly heady (freesia, gardenia) and exotic (mango, guava, pomegranate). The end of the palate is balsamic (pine, Vosges bonbons).
- Overall : long, remarkably well-balanced. Notes of cardamom tea bring huge freshness, as walnut husks delicately envelop the taste buds. With time, it becomes mentholated, vanilla and roasted (coffee, tobacco). The retro-nasal olfaction is extremely fruity (Mirabelle plum, greengage plum), beautifully spicy (star anise) and slightly camphoric. The empty glass is heady, resinous and delicately woody. Notes of candied ginger and pipe smoke linger for a long time after.

The brandSymbolisé par un aigle, ce bourbon du Kentucky est produit dans une distillerie dont le buffle est l’emblème : Eagle Rare est en effet produit dans les alambics de Buffalo Trace ! Crée en 1975 par ma société Seagram, Eagle Rare fait désormais partie de la société Sazerac. Transformé en single barrel, Sazerac compte beaucoup sur la gamme Eagle Rare réputée pour ses bourbons de grande qualité et gourmands.
