All about making whisky
This limited edition of Old Tom was made in an old Victorian dairy farm in Battersea, in London. It is a tribute to Ralph Dodd, an entrepreneur and ingenious spirit who founded the London Distillery Company in 1807. Some of the distillation is carried out in a column still called ‘Cristina’ while the rest is carried out in a vacuum still known as ‘Little Albion’. This organic gin spends a few weeks in American oak barrels and is flavoured with juniper berries, bay leaves, angelica, cardamom, lemon and liquorice. The initial nose features juniper notes and displays incredible richness and concentration. The palate offers subtle vanilla and spices (cloves, ginger). The mid-palate is herbaceous (cut hay) and herbal (bay leaf, lime blossom). Upon airing, it lingers with notes of ripe fruit (pear, plum) and nuts (walnut, almond).
