Tasting note

  • Appearance : incolore.
  • Nose : à la fois frais et capiteux. Frais, car marqué par des notes de chlorophylle et de menthe ; capiteux, car extrêmement camphré et médicinal (baume). Il trouve son équilibre en révélant au fur et à mesure une liqueur délicatement poivrée et citronnée. Une sensation de sérénité et de grande pureté émane de ce nez magnifique.
  • Palate : puissante, ferme. Avec force persuasion, elle s’empare du palais en l’enrobant d’une fine couche de sirop d’agave. Le milieu de bouche est quant à lui beaucoup plus rustique et remarquablement amer (brou de noix). Puis, du sel et du poivre arrivent en rafales successives pour dynamiser la fin de bouche. Celle-ci évolue sur les fruits à noyau (abricot, pêche).
  • Overall : longue, concentrée. Elle fait preuve à la fois de beaucoup de richesse et de subtilité. Là aussi, il faut prendre son temps pour savourer des coeurs d’agave absolument délicieux. La rétro olfaction continue de nous faire déguster l’agave à pleines dents en y ajoutant des fruits exotiques (ananas). Le verre vide est très finement citronné, poivré et salé.

Del Maguey is a collection of fine, rare and 100% agave mezcals distilled by families in the State of Oaxaca. Each mezcal carries the name of the village in which it is produced. The “palanquero” warms hot stones in a hole dug in the ground, then prepares the hearts of agave which are placed inside and roasted over the heat for a several days. They are then ground in a stone mill in order to collect the mash which ferments naturally. Distillation is carried out in wood-fired clay or copper stills. Del Maguey can lay claim to over 400 years of tradition. All of its products are certified “organic”.
