Tasting note

  • Appearance : deep burnished gold.
  • Nose : refined, heady. The initial nose shows Dalmore in a particularly fruity (pear) and exotic (pineapple) light. Then a very light note of smoke envelopes these fruits in a translucent veil. Allowed to breathe, sweet spices (coriander, cumin), heady florals (hyacinth, rose) and, in particular, bourbon vanilla and caramel make it even creamier.
  • Palate : deep, dense. The attack on the palate is dessert-like (stewed apple, burnt toast) and spicy (ginger, cinnamon). With its notes of peach syrup and acacia honey, the mid-palate becomes increasingly smoother. Its gourmand character is further boosted by the presence of salted butter caramel and chocolate on the end of the palate.
  • Overall : long, firm. Apples remain present but in a more liquid form (cider) and the spice becomes more powerful (black pepper, clove, nutmeg). Fine, herbaceous (lichen) and empyreumatic (thuja, cedar) notes give the end of the palate huge freshness. The retro-nasal olfaction is marked by white chocolate and ripe fruits. The empty glass is malty, spiced and delicately woody.

Dalmore can claim to own the oldest stills in the Highlands, one of which has been in use since 1874! It uses a variety of spirit stills for production, with this unique combination enabling Dalmore to obtain an extremely balanced single malt which boasts incredible complexity. For ageing its whisky, Dalmore predominately uses a wide range of sherry casks: Oloroso, Amoroso, Mathusalem, etc. that come from the Gonzales Byass vineyard in Andalucia. An exceptional partnership all round. Once the whisky has been matured, different varieties of cask are assembled to create the different expressions in the range, each being matured for an extra four months in order to help the malts marry and produce harmonious flavours.
