Tasting note

  • Appearance : cuivre à reflets vieil or.
  • Nose : à la fois vif et onctueux. L’influence du fût de sherry le fait osciller entre des notes de café, un joli rancio et des fruits mûrs (abricot, pêche blanche). La mousse, le bois brûlé, les épices (cannelle, gingembre) et l’orge maltée soulignent l’influence du fût de bourbon. Il se prolonge en apothéose sur les fleurs (rose fanée) et le cappuccino. Le sherry a pris le dessus.
  • Palate : onctueuse, tendre. Devenue plus herbacée (malt vert, luzerne), elle hésite entre le sherry et le bourbon. Elle dévoile, pêle-mêle, des notes de noix fraîche, de cire, de tabac à pipe, d’épices (cumin), de chocolat noir et de marron glacé. En fin de bouche, le sherry prend in extremis un léger ascendant (rancio, fruits rouges).
  • Overall : longue, douce. L’influence dominante du sherry se confirme (datte et figue sèche). Les fruits mûrs (mirabelle) sont de la partie. Une agréable amertume souligne son caractère empyreumatique (eucalyptus) et acidulé (marmelade, citron vert). Le verre vide exhale différentes noix (macadamia, noisette, brou, cajou, muscade).

Dalmore can claim to own the oldest stills in the Highlands, one of which has been in use since 1874! It uses a variety of spirit stills for production, with this unique combination enabling Dalmore to obtain an extremely balanced single malt which boasts incredible complexity. For ageing its whisky, Dalmore predominately uses a wide range of sherry casks: Oloroso, Amoroso, Mathusalem, etc. that come from the Gonzales Byass vineyard in Andalucia. An exceptional partnership all round. Once the whisky has been matured, different varieties of cask are assembled to create the different expressions in the range, each being matured for an extra four months in order to help the malts marry and produce harmonious flavours.
