Founded in 1869, the Cragganmore distillery is equipped with four flat-topped stills whose T-shaped lyne arms encourage the reflux of part of the alcohol vapours, which are then re-distilled. This unique shape creates a particularly mellow spirit. Renowned for its complexity, this single malt was chosen in 1988 to represent the Speyside region in the famous Classic Malts collection. Distilled in May 1985, this version invites us to discover a palette of flavours and aromas in constant movement which has no qualms in retracing its steps to gain more richness and concentration. The fruity and empyreumatic registers that are continually developed throughout the tasting are a perfect example.
Profile: the complex initial nose is slightly medicinal (mustard), exotic (mango) and spicy (nutmeg). It even becomes tarry. The concentrated attack is floral (lily, rose) and jammy (apricot). The intense finish is medicinal whilst intensifying the fruity character of the palate. The end of the palate brings us to a malting floor.

- Appearance : deep burnished gold.
- Nose : rich, complex. Delicately placed at the summit of the aromatic palette, a note of mustard brings the nose lots of personality and energy. Exotic fruits (mango), spices (pepper, nutmeg), citrus fruits (lemon, orange), vanilla, fresh fruits (apricot, fig, peach) and dried fruits provide support. Persuasively, it gradually becomes slightly tarry and empyreumatic (beeswax, emery cloth).
- Palate : dense, concentrated. The very full attack is characterized by notes of heady florals (lily, peony, rose), lime blossom honey, apricot jam and bitter orange. The mid-palate wavers between bourbon vanilla and dark chocolate. This sequence of flavours ends in very fresh, milky territory (coconut, almond). Behind it, the fragrances of honeysuckle, broom and tobacco bring lots of depth of field.
- Overall : long, intense. Returning to the medicinal character of the nose, the finish also revisits the fruity registers of the flavour and aroma palette, adding red fruits (strawberry, raspberry) and black fruits (bramble, blackcurrant). Equipped with very delicate minerality (limestone), it draws ever closer to malted barley. The retronasal olfaction is herbaceous (cut hay), spicy (saffron, coriander) and honeyed (lime blossom, verbena). The empty glass brings us to a malting floor.

Cragganmore is one of the rare Scottish distilleries to use spring water with a high mineral content (limestone). It uses very flat stills with T-shaped lyne arms. Although the independent bottler Signatory Vintage cannot claim to be one of the oldest in Scotland, it has managed to build up an extremely solid reputation amongst the great malt connoisseurs. The creator of the famous range The Prestonfield and many other well-known ranges, it is best known for its un-chillfiltered and cask strength bottlings that offer amateurs the chance to enjoy their whisky in its most natural form. It was also one of the first independent bottlers to acquire a distillery and now offers a growing number of expressions of one of the most artisan single malts available.
