CLAIRIN Communal 43%
Clairin, Haiti, 70cl, Ref: 54663
Produced from Clairins Sajous, Vaval, Casimir and Le Rocher, this version is supported by a backbone of sugarcane and hot cane sugar. The remarkably slender palette of flavours and aromas is revealed with extreme sensitivity and sensuality. Each note, whether fruity, floral, medicinal, spicy or honeyed is produced with masterful precision. Dedicated to freedom and authenticity, this "communal" Clairin allows each of its players to express themselves to the full.
Profile: the complex initial nose reveals notes of sugarcane, heady florals and pear. Allowed to breathe, cane sugar brings even more depth. The elegant attack is vanilla. In turn fruity, floral and spicy, the mid-palate has a very fine texture. The rich finish is vegetal (cut hay, dried flowers). Hot cane sugar floods the taste buds.

Tasting note
- Appearance : clear.
- Nose : refined, complex. On the initial nose, sugarcane reveals its heady (geranium, rose) and fruity (apricot, pear) character. Allowed to breathe, cane sugar mixed with liquorice spreads through the aromatic palette, bringing even more depth. Increasingly dense, the nose becomes spicy (pepper, cinnamon) and medicinal (tiger balm). Arriving from far in the distance, superb notes of red fruits (strawberry, raspberry) then appear.
- Palate : unctuous, elegant. The almost creamy attack coats the taste buds in vanilla and almond milk. The slightly tannic mid-palate has a very velvety texture. From white peach to fresh fig, apricot to candied pear, peony to lavender and root ginger to gentian, it reveals incredible finesse. The end of the palate is honeyed (acacia), roasted and vegetal (tobacco, sugarcane).
- Overall : long, concentrated. The very rich finish has lots of texture. The vegetal character of the end of the palate is transcended by notes of cut hay and dried flowers. In the background, still hot cane sugar floods the taste buds. With a beautiful ochre colour, the retronasal olfaction is nuanced and unctuous. With remarkable freshness, the empty glass releases a few aromas of citrus fruit (lemon, grapefruit), sage, orange blossom and vanilla.

The brand
Traditional Haiti ! These highly artisanal eaux-de-vie, similar to white agricole rums, have long been the most popular drink in the remotest, poorest regions of Haiti. Bottled at natural strength, these three bottlings come from three different distilleries but have aspects in common: pure, well balanced alcohols capable of evolving interestingly and expressively in the glass. The Brazilian have cachaça, the Haitian have clairin!
Merchant
The Velier company was founded by the Chaix family in 1947. From 1953 to 1983, this small traditional company, located in the port of Gênes, specialised in the importation and distribution of wines, champagnes and spirits. In 1983, then aged 25, Luca Gargano acquired shares in Velier. Under his influence the company began specialising in the importation of exceptional spirits to be supplied to the most prestigious establishments in Italy. In the early 1990s, Luca Gargano heard rumours of a mythical, quasi-legendary stock of St James Rum that had supposedly been distilled at the end of the 19th century. Eventually he discovered proof that this stock, distilled in 1885 and bottled in 1952, did indeed exist. And in 1991, following lengthy discussions, Luca finally managed to acquire the entirety of this stock, which he then released on the Italian market. These selections of rums have since multiplied and led to the birth of exceptional ranges.
