Each cane is harvested only once completely mature. In keeping with tradition, he adds lemongrass leaves and cin - namon, and for certain vats ginger, to pure, fermenting sugar cane. His Clairin, which alternates wonderfully between classicism and unbridled exuberance, takes us two centuries into the past to breath in the air of another era.
