Old Tom Gin, France / Poitou-charentes, 70cl, Ref: 5947
The result of a blend of 96% ABV wheat distillate and an infusion of plants and fruits (including orange and lemon peel, iris, coriander, cardamom, violet roots, cumin, fennel, liquorice, cinnamon and more) in a 50% ABV neutral spirit, this version was redistilled in direct-fired small pot stills before being left to mature in 100-litre new oak barrels for 4 months. On an olfactory and gustatory level, this version overflows with vanilla-scented notes that emphasise its finely toasted, woody quality.
Bright yellow colour. The nose opens in a dazzling explosion of plants (juniper, mint), candied citrus fruit (orange, grapefruit) and very ripe fruit (pear, apple). This aromatic ensemble boasts a gorgeous, vanilla-inspired balance. Particularly spicy (ginger, cloves, cinnamon), the attack on the palate is just as fruity as the nose, albeit with a more exotic accent (pineapple, melon). The generous mid-palate is evocative of vanilla flan, with herbs and fragrant plants arriving to refresh the palate. Juicy oranges and sweet spices (cardamom, cinnamon) pave the way for a retro-nasal olfaction that is subtly roasted and praline-tinged in nature.

- The brand
The Pierre Ferrand estate is located in Angeac, in the golden triangle of Cognac, right in the heart of the limestone terroir of Grande Champagne. Distillation is carried out in small pot stills (25 hl) in order to gain a maximum concentration of aromas. A grand terroir, small stills and an ancient craft are all brought together to produce the finest spirits! It was in 1775 that France’s first gin distillery was born, in the heart of the citadel of Dunkirk, thanks to the granting of royal privilege. Because it was a contraband product destined for England, this gin was originally transported in small casks. In 1989, a century after its disappearance, this artisan gin was given a new lease of life with small cognac stills from the Pierre Ferrand distillery.
